Course description

Are you interested in food, cooking and providing a quality service within the Catering industry? Would you like to gain a qualification that will teach you the basics about food preparation, giving you an understanding of the industry that will lead to further training options or career choices? This could be the course for you! 
This course aims to introduce you to the principles of Catering, giving you the skills and confidence to progress within the industry or further your education at City College. 

Course content

On this course you will learn about:

  • Working in a professional kitchen
  • Maintaining a safe and secure working environment
  • Developing effective relationships
  • Understanding the catering and hospitality industry
  • Health and safety
  • Healthy eating
  • Cooking skills such as boiling, poaching, steaming, stewing, braising, baking, grilling and frying

Entry requirements

There are no formal entry requirements. All applicants will attend an interview and complete an aptitude test.

Assessment

 All formal assessment of practical skills and underpinning knowledge for the food service element will be College based in our real working environment restaurant which will take place throughout the course.

The food preparation qualification will be assessed through practical skills, short answer tests and assignment evidence.

Financial information

Students are required to supply their own study materials, protective clothing and knives, which is around £300. Other small equipment and commodities are provided. The college will provide you with a equipment and supplier list.

Future opportunities

After successful completion of this qualification, you may wish to further your skills and training by applying for the Level 2 Diploma in Professional Cookery.

Alternatively, this qualification will enable you to apply for a basic food operative in one of the many sectors within the industry, including restaurants, hotels, contract catering, industrial and airline catering.
