Professional Cookery Level 2 Diploma at Havering College of Further and Higher Education

Course description

Ideally you will have already completed a more basic cookery course or have a good experience of cooking either in the home or in industry.

This is a professional cookery course designed for learners who have some experience of cookery. It equips you with the skills required to prepare and cook food in a range of industry environments.

Entry requirements

NVQ Level 1 Food Preparation and Cookery or appropriate experience. You will need to complete a satisfactory interview and reference to gain a place on the course.


Assessment is by practical observations in the kitchen and restaurant and online mini tests.

Compulsory subjects include:

  • Professional cookery;
  • A compulsory Work Placement;
  • Food and Drink Service;
  • Health and Safety in the Workplace;
  • A broad range of Cookery subjects including:
  • Poultry, Meat and Fish;
  • Soups, Desserts, Sauces and Pastry.

Future opportunities

This course can lead to an appropriate level 3 programme here at the college or employment in the catering industry.
