Course description

We offer a varied course with a mixture of practical cookery sessions, theory lessons and various opportunties to work in a realistic working environment.

You can develop your 'creativity' skills to produce amazing dishes, practical skills and prepare yourself for any number of career opportunities.

Course content

Mandatory units that all students must study are; The principles of food safety supervision for catering, Supervisory skills in the hospitality industry, Practical gastronomy, Advanced skills and techniques in producing meat dishes, Advanced skills and techniques in producing poultry and game dishes, Advanced skills and techniques in producing fish and shellfish dishes, Advanced skills and techniques in producing vegetable and vegetarian dishes.

Entry requirements

Preferred level 5 in Maths and English GCSE, but any other applications will be considered with an interview by the Vocational department and the student to assess suitability.

Assessment

You need to achieve 74 credits at your target grade which are made up from a variety of mandatory units.

The hospitality industry as a whole, further study to degree level and beyond.
