You will study the following topics:

  • Health and safety and maintaining food safety standards in the kitchen environment
  • Catering operations, costs and menu planning
  • Healthier food and special diets
  • Perparing and cooking meat, offal, fish, shellfish, poultry and vegetables
  • Preparing and cooking stocks, soups, sauces and pastes
  • Preparing and cooking rice, pasta, grains and egg dishes
  • Preparing and cooking a range of desserts and puddings
  • Producing biscuits, cakes, pastries, sponge and dough products
