Professional Cookery Level 2 Diploma at Tresham College of Further and Higher Education
This course focusses on developing the practical skills that are required for employment in many catering and hospitality establishments and events.
You will study food preparation and cooking including fruit and vegetables, soups, sauces, meat, offal, poulty and fish and hot and cold desserts. You will also study employment skills, food safety, health and safety, menus and cost management. You will develop your skills in the commercial kitchens at the Manor House Restaurant and have the opportunity to participate in regional and national competitions and work experience at prestigious outdoor events.
Level 1 qualification in Catering with a satisfactory reference and grade E or above in GCSE English.
This course involves practical sessions in The Manor House restaurant kitchens alongside written assignments and theory tests to support learning. Practical assessments will be carried out in test conditions at set times throughout the year.
You will need to buy a textbook, approx. cost £24.
Employment in the food industry or, with a good tutor reference and satisfactory attendance record, further study on courses such as the Level 3 in Professional Cookery.
