Hospitality - Introduction to Professional Cookery Level 1 at North Kent College

Course description

The Level 1 Diploma in Professional Cookery and Service is suited to learners wanting a practical experience where the development of professional cookery, service skills and knowledge can contribute towards a fulfilling career in the Hospitality Industry. The course is aimed at 16-19 year olds who have just completed studies at school, or are looking to get back into education to study in this expanding and desirable vocational area.

Course content

The course consists of 17 units, all of which are taught in a practical context. You will also study a functional skill in Maths and English.

  • Introduction to employment in the catering and hospitality industry
  • Food safety in catering
  • Health & safety awareness for catering and hospitality
  • Introduction to healthier foods and special diets
  • Introduction to kitchen equipment
  • Prepare and cook food by boiling, poaching and steaming
  • Prepare and cook food by stewing and braising
  • Prepare and cook food by baking, roasting and grilling
  • Prepare and cook food by deep frying and shallow frying
  • Regeneration of pre-prepared food
  • Cold food preparation
  • Legislation in food and beverage services
  • Understanding menus
  • Dealing with payments and bookings
  • Food and beverage service skills
  • Bar service skills
  • Hot beverage skills

Entry requirements

Applicants are interviewed and selected based on receiving a satisfactory school report or reference. GCSEs at D-G Grades or Entry Level 3 qualifications preferably with English are desirable.


This programme will use a variety of assessment methods which will include periodic skills tests, short answer questions, and assignment work. Your work is graded pass, merit and distinction, and you will be able to track your performance as you work towards the qualification. There will also be classroom activity, online learning, visits and assignments to supplement learning. Your studies will culminate in a set of final practical tests which will count towards a large proportion of your final grading.

Financial information

The course is free if you are aged 16-18

As you will be working in a professional kitchen and restaurant environment, you will be required to wear approprite uniform and use specialist knives and tools.  The College has negotiated a competitive price for a uniform adn equipment package.  This is available directly from the supplier and the current cost is approximately £150.

Materials fees of £60 are payable for additional trips, food hygiene exam and final practical exams. further information can be gained from staff.

Future opportunities

Learners can progress on to Level 2 Diploma in Professional Cookery or Level 2 Diploma in Professional Food and Beverage and Level 2 Certificate in General Patisserie and Confectionery.  There are also opportunities to be employed in the industry and continue on an Apprenticeship programme.
