Course description

Depending on your level of study, you could learn practical skills in:
• Food Safety and Sanitation
• Food Technology, Commodities and Basic Skills
• Stocks, sauces and soups
• Fish and shellfish
• Vegetable and potato dishes
• Eggs, pasta and rice
• Butchery including poultry, meat, offal and game, including whole carcasses
• Sous vide modern cookery techniques
• Curing, smoking and other preserves
• Contemporary presentations

Entry requirements

Strong motivation with a proven commitment to hard work and a good reference.


You will be advised at interview about additional costs for chef uniform and equipment.

Future opportunities

Progression into employment, and after a sufficient period of working in the industry, extending your practical skills, knowledge and gaining experience, progress onto a Level 2 course.
