Food and Drink Service Intermediate Apprenticeship Level 2 at Exeter College

Course description

This is the hospitality industries professional qualification for staff that serves both food and drink in any type of outlet. It is suitable for all hospitality staff that serves food and drinks as part of their normal job role.
As an Apprentice you will learn the range of service skills necessary in today's restaurants for food and drink. This includes customer care, a range of food service skills, and specialised training in drinks service, barista skills and processing payments. In addition you will learn about the importance of effective working relationships, health and safety and food hygiene.

Course content

The Food and Drink Service NVQ level 2 comprises of:

501 Maintain a safe, hygienic and secure working environment
504 Contribute to effective teamwork
601 Give customers a positive impression of yourself and your organisation
604 Maintain food safety when storing, holding and serving food

502 Maintain and deal with payments
509 Prepare and clear areas for counter/takeaway service
510 Provide a counter/takeaway service
606 Prepare and clear areas for table service
607 Serve food at the table
608 Provide a silver service
609 Provide a buffet/carvery service
611 Prepare and clear bar area
612 Serve alcoholic and soft drinks
613 Prepare and serve cocktails
614 Prepare and serve wines
615 Prepare cellars and kegs
617 Prepare and serve dispensed and instant hot drinks
618 Prepare and serve hot drinks using specialist equipment

Entry requirements

For the Intermediate Apprenticeship you need four GCSEs at Grade D or above including English Language and Maths at D+, and need to complete an initial assessment at college as part of the application process. You need to be employed in a relevant job role.

Financial information

You will need to purchase college restaurant uniform and reference book.

Future opportunities

On successful completion of the Intermediate Apprenticeship you can then progress on to the Advanced Apprenticeship in Hospitality Supervision. This course provides an excellent way to build your career in the industry and after this you could then progress onto further management training.
