Professional Cookery Level 3 at Lancaster and Morecambe College

Course description

This is an NVQ Level 3 course that runs for 34 weeks. 

Course content

The course is very practical and programmed throughout the year in modules. Each week covers both practical and theoretical work. The units studied include: • Complex hot and cold desserts • Bread and dough products • Complex meat and poultry dishes • Complex hot and cold sauces • Complex soups • Complex fish dishes • Complex vegetable dishes • Practical training in HACCP

The dishes are both classic and contemporary ranging from: • Pressed terrine of ham hock and mustard potatoes • Grilled fillet of monkfish with sauté new potatoes, castle of green beans and a tarragon aioli.

The course may also include visits to: • Trade Shows – Manchester • Restaurants • Fish markets • Butchery classes 

Entry requirements

5 GCSEs at grade A*-C including English and maths OR a Level 2 related qualification. Entry criteria will be applied at the discretion of the course manager.

Assessment

There are no formal examinations. Students are assessed at the end of each module approximately every two to three weeks. Practical, oral and written assessments are the key components of this course, together with comprehensive NVQ portfolio building.

Financial information

You will require a full set of kitchen uniform a set of knives and Practical Cookery book (complete cost from our supplier £137), but you may already have some kit which is suitable; talk to us before you order. You will also have the opportunity to join our trips and visits programme which may incur additional costs. 

Future opportunities

Promotions are always possible within hotel and catering. The course would also be useful for practising chefs wanting to gain new ideas and share the experience of others. There are always alternative employment aspects and some students have gone onto work at Northcote, L’Enclume and even jobs in America due to the links with the course. The nature of the course allows you to gain new skills and experience different styles taking them back to your workplace.
