Course Structure year 12

Terms 1 and 2

Unit 6

Food and Drink Service

You will gain an understanding of the importance of the meal experience in food and drink service operations, including a teambased lunch service for guests.

Unit 1

The Hospitality Industry

You will gain a knowledge and understanding of the industry. Local visits reinforce learning.

Terms 3 and 4

Unit 2

Principles of Supervising Customer service

You will gain an in-depth knowledge of how to supervise customer service performance.

Terms 5 and 6

Unit 3

Providing Customer Service in Hospitality

A work experience based Unit that gets you out into industry. You will learn to understand the role of communication, presentation and teamwork in customer service.

Course Structure year 13

Unit 12

Contemporary World Food

You will gain knowledge on the commodities in contemporary world food. Menu planning and buffet lunch service.

Unit 19

Personal Selling and Promotional Skills for Hospitality

You will gain knowledge of how personal selling and promotional activities benefit hospitality businesses.

Unit 7

Alcoholic Beverages

You will gain knowledge of the different types of alcoholic beverages and matches with food, its storage, equipment and presentation. There will be visits and outside speakers for this unit of the course.
