Culinary Skills Level 2 Diploma at Middlesbrough College

Course description

This one year qualification is an excellent way to broaden your culinary skills, preparing and cooking a wide range of dishes which include, stock, soups, meat and poultry, fish, pastry products, cold desserts and cakes.

Course content

Units will include - Ongoing practical assessments 707: Prepare and cook stocks, soups and sauces (6) 708: Prepare and cook fruit and vegetables (6) 709: Prepare and cook meat and offal (8) 710: Prepare and cook poultry (5) 711: Prepare and cook fish and shellfish (5) 712: Prepare and cook rice, pasta, grains and egg dishes (6) 713: Produce hot and cold desserts and puddings 714 Produce paste products 715 Biscuits, cake and sponge products You will also study English, Maths or ICT as part of your main programme

Entry requirements

Level 1 Diploma in Professional Cookery or 4 GCSEs Grade E or above to include English and Maths or equivalent. "If you do not have a Grade A to C in English and/or Maths, you will be required to continue studying these subjects as part of your Study Programme."

Assessment

Assessment will be completed through a range of practical tests and short answer papers and assignments. There is no end of year practical synoptic tests. The assessment on this programme will take the form of: Practical observation (with appropriate witness testimony) Short online testing Externally set and externally marked assignments
