Professional Cookery Advanced Level 3 Diploma at City College Brighton and Hove

Course description

Would you like to develop your technical cookery skill to an advanced level? Would you like to continue your training in a practical environment – where experience counts? This could be the course for you! 
The VRQ Level 3 aims to build on your existing knowledge and skill, taking it to an advanced level so you will be able to confidently apply for supervisory positions or build on your menu portfolio. 
This qualification will enhance your knowledge of the catering industry through testing your preparation and cooking skills and written assignment work.

Course content

On this course you will learn about:

  • Preparing and cooking complex fish dishes
  • Preparing and cooking complex meat and poultry dishes
  • Preparing and cooking complex sauces and cold dressings
  • Preparing and cooking complex vegetable dishes
  • Preparing and cooking complex fresh pasta dishes
  • Preparing and cooking complex vegetarian dishes
  • Monitoring health and safety
  • Managing oneself
  • Control, receipt and issues of storage
  • Supervisory skills

Entry requirements

Our Catering courses are progressive, so due to the specific skills needed in the catering industry you must complete our Level 1 and 2 courses before starting this Level 3 course.

Assessment

All formal assessment of practical skills and underpinning knowledge for this programme will be College based. This will take place throughout the course. Recorded work experience assists in achieving units.

Financial information

You are required to supply your own study materials, protective clothing and knives, which will cost around £250. Other small equipment and commodities are provided. The College will provide you with an equipment and supplier list.

Future opportunities

After successfully completing this course you can apply for the Foundation Degree in Culinary Arts at City College, or one of the many other Degree level programs around the country.

Alternatively, you will have the skills and confidence to progress onto a supervisory role in the workplace or develop your menu to include dishes with advanced cooking techniques.
