Course description

The hospitality and catering professional cookery apprenticeship is a broad and exciting programme offering apprentices the opportunity to gain valuable practical experience utilising the College's training kitchens and restaurant. Herefordshire and Ludlow College's hospitality and catering learners have a renowned reputation, winning prizes at local and national competitions such as the 'Brakes Student Chef Team Challenge’ which took place in London in February 2012. The team came third out of 71 entries and were highly commended on their communication, preparation and hygiene skills.

High levels of motivation and drive are required, along with attention to detail, charisma and good people and communication skills. Roles are varied and you could be involved with planning menus, dealing with suppliers, managing a budget, monitoring and maintaining the quality of food, front of house service, etc - no two days will ever be the same!

Course content

  • Level 2 NVQ Diploma in Professional Cookery - this is the competency part of the qualification and essential for you to achieve the full apprenticeship. This part shows that you are competent in performing the skill, trade or occupation your apprenticeship requires.
  • Level 2 Certificate in Hospitality and Catering Principles (Professional Cookery) -to show that you have the necessary technical skills, knowledge and understanding of theoretical concepts as well as knowledge and understanding of the relevant market and industry.
  • Functional Skills - Providing you with a good level of literacy and numeracy. Level 1 English, and Level 1 maths

Entry requirements

  • You would normally be expected to have 4 GCSEs at grade E or above (including maths and English), or a relevant vocational qualification at Level 1 or above.
  • Those applicants without formal qualifications but who can evidence substantial and relevant sector work experience will also be considered.
  • All applicants are offered a place subject to satisfactory interview and an initial assessment in maths and English.

Assessment

Assessment will take place through practical training at the College and at the work place as well as via theory which is demonstrated through a portfolio of evidence. This will involve extensive report writing of a good standard. Work-based assessments are also carried out. Any relevant prior knowledge you may have will be used to assist in planning the programme and training.

Future opportunities

Typical Employment:
Apprentices at level 2 work as kitchen assistants, cooks and chefs and will work in a range of large and small kitchens including the NHS, Armed Services and schools, fast food outlets and restaurants offering a variety of cuisines and fine dining, including Asian and Oriental cuisines.

Progression:
There is scope to progress further on to a Level 3 Advanced Apprenticeship where there are opportunities to move into jobs as Sous Chefs or Senior Chefs or specialise in pastry and confectionery.
