Professional Cookery Level 2 VRQ Diploma at Southport College

Course description

This Course aims to cover both practical and theory subjects in cookery craft skills for the fast moving hospitality industry. The qualification also covers a broad understanding of other aspects of kitchen operations, essential for those aspiring to work in hospitality.The content of this qualification will ensure that learners build on the foundation skills developed in Level 1 diploma . You will gain practical knowledge in a range of areas, learning to prepare, cook and present fish and shellfish, meat, poultry and game, vegetable dishes, sauces and dressings, patisserie, fermented goods and desserts. You will also look at gastronomy and food culture. Alongside the theoretical aspcts of Professional cookery including
•Food Service
•Health and Safety
•Kitchen operations, costing and menu planning
•Customer Service

You will be able to enjoy the benefits of a full-time course, whilst gaining practical work skills in the College’s excellent kitchen and restaurant facilities.

The programme also includes Functional Skills at an appropriate level

Course content

You will study:

The course is made up of a number of individual units.

Three units are linked to personal and social development and are:
Undertaking and enterprise project - includes all aspects from planning and advertising to selling a product. Healthy lifestyles- including diet and fitness
Developing Personal Confidence and Self Awareness - including strengths,weaknesses and setting personal goals 

Units will include:

Investigate the hospitality and catering industry
Food safety in catering
Health and safety in catering
Nutritional and special diets in catering
Kitchen operations, costs,menu planning
Applying workplace skills
Prepare and cook sauces,soups and stocks
Prepare and cook vegetables and pulses
Prepare and cook meat
Prepare and cook poultry

Entry requirements

3 GCSEs at grade D or Level 1 Diploma in related subject + interview and suitable reference.
For students who have not yet achieved a grade C in Maths or English it is compulsory to study either Functional Skills or GCSE in each relevant subject. Attendance at these sessions are a vital part of your course to enhance your employability skills and prospects.


Each unit is assessed by a combination of externally set assignments and Short answer Question Papers
Craft units are assessed by a series of practical assessments covering the range of different commodoties.

Future opportunities

Completion of this course can lead to a number of options in education and employment. You could move directly into employment and apply your knowledge and skills in the workplace. You are encouraged to gain work experience during this course, and may be able to secure a full position when you finish.
Alternatively, you may choose to progress onto a Level 3 course, where you can specialise in either advanced professional cookery or patisserie and confectionary
