Professional Cookery Level 2 at Peterborough Regional College
Whether being a head chef takes your fancy or running your own hospitality and catering business is more to your taste, then the professional cookery level 2 qualification could be for you.
A wide range of culinary skills will be covered throughout this course giving you a good foundation to move onto the Advanced Professional Cookery Level 3, Food and Beverage Supervision Level 3 or employment in to the hospitality and catering industry.
You will study a range of subjects to include food preparation, cooking, kitchen design, food hygiene and safety.
You will need GCSE grade 3 (D) in English and maths and the Level 1 Introduction to Professional Cookery preferably at Merit grade. You will also be required to attend an interview.
You will be assessed in practical situations with some theory work. You will work in our fully equipped kitchens and restaurant where you will develop your practical skills and teamwork. You will be required to gather practical and theory evidence and build a collection of your work into a portfolio. You will also be required to complete practical and theory assessments throughout the course. At the academic year you will complete a 3 hour and 5 hour practical synoptic test.
You will need a food preparation and food service uniform, a set of knives for food preparation and textbooks. Information on this will be provided at your interview.

You will be required to attend a Welcome Event, details will be provided upon application.
Hours vary depending on which practical area you are working in. There will be some evening sessions.
