Professional Cookery and Food Service Diploma Level 2 at Hugh Baird College
If you want to be a chef or work in the Hospitality and Catering industry, this is the course for you. You will study in our industry standard training kitchens and and your skills will be enhanced with work experience in the L20 Hotel School restaurant. Assessment will take place throughout the course, with your final cookery and pastry test observed by a Chef from a local hotel or restaurant.
The course includes theory studies for cookery and food and drink service. You will be required to do some research in your own time.
The programme also includes studying Math’s and English functional skills, or towards GCSE grade A-C if you do not already have these grades.
You will study a range of subject areas including:
- Healthy food and special diets
- Fish cookery
- Meat cookery
- Doughs, soups and pastry
- Food service
- Menu writing
- Bar work
In order to qualify for this course, you will need:
- 4 GCSEs at grade G or above including English or a relevant Level 1 qualification.
Entry to all courses are subject to a successful interview, a satisfactory reference from your school or employer and evidence that you will be a committed student
You will be assessed throughout the course and your final cookery assessment will be carried out with your tutor and a local chef.

If you are aged 16-19, this qualification will form a substantial part of your study programme. The study programme has been designed to ensure that young people are fully equipped and ready to move on to the world of work or higher level courses. In addition to your main qualification, will you also get the opportunity to undertake relevant and CV bolstering work experience out in your chosen industry. You will also be supported through maths and English qualifications.
