Professional Catering VRQ Diploma Level 2 at Gloucestershire College
This course gives you the opportunity to build on your existing skills in professional cookery and food service.
You will spend time working in Renaissance Restaurant, preparing and cooking food, and this will involve at least one night a week in college.
As in your first year you can expect to spend a week working at the Cheltenham National Hunt Festival in March.
You will learn how to prepare food commodities with skill, care and attention to detail. You will also study how to prepare healthier dishes, larder, menu planning and costing, and patisserie.
You will study:
- More advanced dishes
- Menu planning and special diets
- Functions and banquets
- Run a service/section
- Functional skills
You will need to have 3 GCSE's at grade D or above or to have successfully completed a Level 1 qualification with merit and functional skills. Selection is completed following a successful interview and positive college reference. All courses have assessment during the course which will include practical and theoretical tests. You will need to pass each of these in order to progress onto the next stage of the programme.
The assessments will build on the work you have done in on the Level 1 programme, and enable you to continue to gain merits and distinctions, and will be a mixture of practical and written work.
