WHAT DOES THE SUBJECT INCLUDE?

This course is suitable for those who love food and enjoy practical daily challenges in an exciting industry. This course is ideal for individuals who are pos. itive, out-going and lively. The aim of the programme is to enable learners to attain the necessary skills to do well in this dynamic industry. Gastronomic and Food and Beverage Service Skills will be taught by practical lively demonstrations and hands-on experience will allow learners the opportunity to practice the skills they have learnt.

WHAT IS THE STRUCTURE OF THE COURSE?

These programmes are largely practical. Essential theory is generally taught using portfolios of evidence. You will study Food and Drink Service where you will develop those skills needed to work in a busy restaurant. In Food Preparation and Cooking you will gain the basic cookery skills required by all aspiring chefs. We will help you develop your research skills to help you gain a thorough understanding of the hospitality sector and enable you to make informed decisions about your future career.

IS THIS COURSE FOR ME?

Candidates require a genuine interest in food and customer care and the ability to succeed and have fun in a challenging environment. Acceptance to this programme will be by interview and the outcomes of initial guidance. Applications from enthusiastic and well-motivated students would be desirable.

Entry requirements

 

L2 City and Guilds Professional Food Cookery or equivalent.

Financial information

You will need to buy one set of chefs’ whites, a restaurant uniform, your own personal knife set and two text books. (You may be able to get help with the costs from the College’s Learner Support Fund. More details are available from the Student Services team)

Personal kit and equipment is purchased through Russums Catering, this will be a cost of £200.

Future opportunities

The NVQ Certificate provides an excellent foundation for those wishing to progress into a career in the hospitality and catering industry locally, nationally or internationally.

 

Further information

You will have the opportunity to work and be assessed in the college restaurant, plus outside catering events and other real workplace environments. You will also be able to achieve a range of related catering awards including Food Safety, Health and Safety, Essential Skills in Communication and Application of Number. There will also be opportunities to participate in national cookery competitions.
