Introduction to Professional Cookery Level 1 Diploma at Newbury College

Course description

Passionate about food? This is a one year course for students who enjoy cookery and are interested in making catering their career. The course introduces students to Health and Safety and food safety as well as giving them the opportunity to produce different dishes and develop skills using a variety of different ingredients. You will have an opportunity to work in a restaurant environment; cooking food for customers in the College's new training restaurant. In addition we include a skills project in professional Food and Beverage service and an opportunity to progress to level 2. What makes a good course? We believe it is Academic content, Work focused Enrichment, Tutorial, Independent learning, Functional Skills in English and Maths, Learning support.



The course will include at least two practical kitchen sessions per week, plus one lesson in professional cookery theory. The topics you will cover include: Basic health and safety Food safety, personal and kitchen hygiene which includes a Level 2 Hygiene certificate Knife skills and using kitchen equipment Learn about ingredients Learn about cooking techniques
Learn about food presentation Learn how to make various types of bread and pastry items Learn how to prepare and present cold compound salads and hot and cold canapes Learn how to prepare meat and poultry for cooking Learn about managing a kitchen section during a restaurant service Work at Ascot during the busy races Gain experience cooking food for various functions both in and outside college Functional skills in maths and English optional or mandatory depending on GCSE grades Curriculum support provided

Entry requirements

Entry Level: Students will be required to attend an interview. Level 1: Students will need to have four GCSE passes at grade E or above, preferably including Maths and English. Alternatively, students will be accepted on to the course if they have a vocational qualification at pass or above, and Functional Skills Maths and English, preferably at Entry Level 3. functional skills qualification is a mandatory part of this course.


This course is assessed by regular practical assessment and the completion of a portfolio. There is some written work attached to the course including food hygiene, health and safety and nutrition tests. There are written tests on cooking methods and written assignments.

Future opportunities

Level 2 Diploma in Professional Cookery, NVQ Level 2 part time, or Apprenticeship.
