Professional Cookery (Patisserie and Confectionery) - Level 3 NVQ Diploma at Blackpool and The Fylde College

Course description

This course is for those who have a keen interest in the Catering and Hospitality industry. It is suitable for those who want to train as a Professional Pastry Chef, Patissier or develop their skills so that they can progress to a more senior role. The qualification aims to provide you with a wide range of specialised pastry skills to enable you to produce items at a high standard

It will also provide an excellent grounding for progression onto higher qualifications, e.g. Degree programmes. You will be able to develop further within this industry offering opportunities to travel the world

Course content

There are 11 mandatory units which cover food hygiene, health and safety and developing productive working relationships with colleagues, as well as units such as:

  • Prepare, cook and finish complex bread, dough, cake, sponge, biscuit pastry and scone products
  • Prepare, process and finish complex chocolate, marzipan, pastillage and sugar products
  • Prepare and cook complex hot and cold desserts
  • Produce sauces, fillings and coatings for complex desserts


Through centre devised assessment material in line with City & Guilds criteria which is internally marked and externally moderated. Ongoing formal and informal assessments will be completed throughout the course. The assessments will prove industry knowledge and competencies to show how you would apply your learnt knowledge and skills in a creative and effective way

Future opportunities

On successful completion of the course you will have the opportunity to apply for the Level 3 NVQ Diploma in Professional Cookery or L3 Diploma in Professional Bakery or progress to a higher level of learning such as; Foundation Degree in Hospitality and Licensed Retail Management, Foundation Degree in Events Management or employment within the catering and hospitality industry such as:

  • Pastry Chef
  • Confectioner
