Advanced Professional Cookery (Kitchen & Larder) L3 Diploma at Bishop Auckland College
Bishop Auckland College has one of the largest catering departments in the North East. Training students to work to industry standards and applying their skills in our newly launched state of the art kitchens and Ambition restaurant.
This full time course is taught over 3 days per week and possibly one evening. You will advance your skills and techniques in producing dishes to a professional standard (including game and shellfish). You will develop your supervisory skills in food safety and kitchen operations. You will work as part of a team providing and serving food in the College restaurant but taking a more supervisory role. You will have the opportunity to study practical gastronomy and product development. You will be able to update your Maths and English functional skills or GCSEs in order to prepare you for working in the industry. Routes of Study Level 3 City & Guilds NVQ Diploma in Professional cookery – Maths & English – Real working environment experience in the kitchen and food service areas. Level 3 City & Guilds VRQ Diploma in Advanced Professional cookery – Maths & English – Real working environment experience in the kitchen and food service areas.
Both programmes give you a firm grounding in Hospitality and Catering enabling you to experience working in the busy kitchens. Also working in the College restaurant will prepare you for employment in the sector or progression to a higher level course.
What can I do when I finish?
If you gain suitable grades you may progress to the Level 4/5 HNC/HND Hospitality Management course.
Before commencing the course you will be required to purchase uniform for both the kitchen and restaurant. Course text books are available at discounted rates from the College. Assistance with this may be available.
