Catering and professional chefs Apprenticeship Level 2 at Mizuna Training Limited

Course description

These qualifications are designed for learners employed in hospitality roles such as chefs, fast food service assistants or kitchen assistants, who need to develop or consolidate their skills. Learners are required to take mandatory units which cover aspects of maintaining a safe, hygienic and secure working environment, working effectively as part of a hospitality team and maintaining food safety in a hospitality environment. Learners then have a choice of optional units covering different hospitality areas such as food and beverage service or beverage service. There is a wide range of optional units allowing learners to choose units to meet the needs of their own work role.


Training and Assessment is tailored to both the learner and employer needs. We will utilise a number of methods according to the preferred learning style indicated through the initial assessment. These can be 1 to 1 up skilling either by trainer or employer, the use of workbooks, audio and online support tools. The Professional Cookery Apprenticeship is delivered within the workplace over a minimum of 12 months.

On the next pages are the units that can be chosen to create the NVQ (competence) element of the Apprenticeship. We will discuss these with both the employer and learner to ensure that the qualification reflects the requirements of the role and the needs of the learner. Once chosen we will then look at the units for the knowledge element often reflecting the competence choices.
