Professional Chef's Diploma (NVQ) in Professional Cookery Kitchen and Larder Level 2 Diploma at Darlington College

Course description

This course seeks to build on the knowledge, training and enthusiasm you already have for cookery and will teach you how to prepare a variety of dishes. You will also develop your knowledge of health and safety and how the catering and hospitality industry operates.

If you have not achieved a C grade or above in English or maths, you will as part of your course be required to work towards this as part of your study programme.  You will be given the opportunity to go on work experience at certain times during your course.

To develop your employability opportunities you may also be given enrichment classes. This may focus upon additional qualifications, industrial updating and career preparation

Course content

You will work in the college restaurant, The Glasshouse in the kitchen

In addition, there are seminar based activities to cover the knowledge to support practical activities and general awareness of the hospitality industry. These college based activities will be supported by a programme of visits and trips to enhance the learning process, where possible.

  • Food safety in catering
  • Health and safety in catering and hospitality
  • Prepare and cook stocks, soups and sauces
  •  Prepare and cook fruit and vegetables
  •  Prepare and cook meat and offal
  •  Prepare and cook poultry
  •  Prepare and cook fish
  • Prepare and cook rice, pasta, grains and egg dishes

Entry requirements

No formal qualifications are required, but a keen interest in the subject is essential alongside a satisfactory school report.  You will be expected to work towards Level 2 maths and English or hold a relevant Level 1 catering qualification.


Underpinning knowledge is delivered in the theory lesson and is tested by a series of question papers. The qualification is portfolio based there are no formal examinations.

Future opportunities

Progression to NVQ Level 3 Professional Cookery either Kitchen and larder or Patisserie and Confectionery.

There are many careers routes that require this qualification ranging from working in hotels, restaurants, schools, hospitals, care homes and cruise ships.
