Level 2 Diploma Culinary Arts and Hospitality at Bournville College
This programme is aimed at individuals who wish to pursue a career as a chef or pastry chef. The course involves a combination of practical and theory and prepares learners to be career ready.
The Level 2 in Culinary Arts and Hospitality consists of a programme of study and includes qualification in the following subject:
Level 2 Diploma in Food Preparation and Cookery (Culinary Arts
In addition, learners will develop skills in Patisserie and Confectionery by attending additional specialist sessions.
The course includes a combination of kitchen and restaurant skills which will involve learners producing a range of dishes and working as part of the kitchen brigade in our training kitchens as well as developing a variety of skills in the restaurant including barista skills, wine service skills and customer service
The course prepares learners for a career in the hospitality and catering industry in various roles so has a huge focus on employability skills. Learners are involved with a range of trips and visits, guest speakers and also undertake relevant work experience. There is an expectation that learners maintain 100% attendance.

Investigate the catering and hospitality industry
Food safety in catering
Health and safety in catering
Kitchen operations costs and menu planning
Prepare and cook meat
Prepare and cook poultry
Prepare and cook fish and shellfish
Prepare and cook desserts and puddings
Prepare and cook bakery products
Level 1 in Hospitality OR
4 GCSEs or more at D grade including English and maths
You will be assessed by observation of skills and competence and will also be asked to produce assignments, presentations and work documents.
The course prepares you for a career in the hospitality and catering industry with job roles that include chef and many more. This also provides opportunities to progress on to a level 3 course of study providing there is evidence of excellent attendance, ability and attitude towards learning.
