Professional Cookery - Level 2 Diploma at Blackpool and The Fylde College

Course description

This qualification is an exciting opportunity for anyone who wants to work as a professional chef in the catering and hospitality industry. You'll learn about many aspects of the industry and gain valuable practical and teamwork skills alongside developing your own personal qualities and employability skills.  You'll gain a high standard of cookery skills from processes, such as roasting and frying to commodities, whilst also learning other workplace essentials like menu design.

You will take part in activities which are interesting and fun and that will help you to get ready for progression on to a higher level course in college or preparation for work

Course content

You'll cover things like:

  • Food safety
  • Health and safety in catering
  • Healthier foods
  • Costs and menu planning
  • Preparing and cooking different foods

Assessment

The assessment for this qualification is through externally set assignments which are internally marked, graded and externally moderated.

Ongoing formal and informal assessment will be completed throughout the course. These assessments will prove industry knowledge and show how you would apply this knowledge using your own creative flair

Future opportunities

On successful completion of the course you will have the opportunity to apply for the Level 3 NVQ Diploma in Professional Cookery, NVQ Level 3 Patisserie and Confectionery, an Apprenticeship or employment within the catering and hospitality industry such as:
