Professional Cookery Level 2 Diploma at Truro and Penwith College
You will learn all of the necessary knowledge, qualities and qualifications to work towards a post as a professional chef and/or front of house as waiting, barista or bar staff. In addition to these two qualifications, you will also undertake a Level 2 Barista Skills certificate.
Working in our two modern kitchens, at private catering events and food festivals, the restaurant and bar, will help you to further develop your communications, organisational, team working and interpersonal skills. Other gains include improved time management skills, the experience of working under pressure, and a degree of supervisory work. The focus on this course shifts from mastering and understanding the basic cooking methods to utilising these methods to prepare and cook different foods.
You will learn practical skills and related theory in: pastry work; larder work; food and beverage service; wine service; preparing and cooking fish and shellfish; butchery.

The majority of your time at College will be spent in the College's service kitchen and restaurant as well as the traditional training kitchen where you will develop essential basic skills. Theory work, which is related to the practical work, is taught in a classroom situation. In the theory units, you cover topics such as health and safety, kitchen operations, and workplace skills.
Applicants for a Level 2 programme will normally have:
- at least four GCSEs at grade D or above and/or have completed Level 1 in Professional Cookery
- GCSEs to include English and maths at Grade D or above or Level 1 Functional Skills qualifications
- the willingness to study for an additional qualification in English and/or maths if you don’t have these

Applicants will be invited to attend an interview and complete an internal assessment.
You receive continuous, individual assessment of your practical skills and we will also test your theoretical knowledge. Your tutor monitors your progress and will guide you to ensure you achieve the most from your study.
A VTCT qualification will enable you to gain employment within many types of catering and hospitality establishments or progress here onto the Level 3 VRQ Diploma in Professional Cookery Studies or the Level 3 NVQ Diploma in Hospitality Leadership and Supervision. Alternatively, you could enter the hospitality industry at a qualified operational level.
Past students have gained employment with companies such as Nathan Outlaw’s at St Enodoc, Rick Stein’s and the St Moritz Hotel. From year two, you may be given the opportunity to undertake the two week, twice yearly work experience trip to Paris which all students have found to be an incredible and valuable experience.
