Introduction to Professional Cookery and Food and Beverage Service Level 1 City and Guilds at Brockenhurst College

Course description

The course is designed for students who wish to gain a high degree of craft skill in the areas of Professional Cookery and Food Service. The emphasis is on learning practical skills and related theory. 

The majority of student’s progress to the second year of training but year 1 is a complete course on its own and you will achieve a diploma in Food and Beverage Service and Professional Cookery.  Some students choose to leave at the end of this phase.

In year 2 you study for a professional diploma in Professional Cookery and Food service.

Course content

You will learn practical skills and related theory in:

  • Pastry work
  • Larder work
  • Food and beverage service
  • Wine service
  • Food hygiene
  • Functional skills such as application of numbers and communications.

The majority of your time at College will be spent in the College’s training kitchens and restaurant as well as the traditional training kitchen where you will develop essential basic skills.  Theory work, which is related to the practical work, is taught in a classroom situation.

Entry requirements


Food Safety Certificate

There are no formal entry requirements, but students will be asked to attend an interview where College staff will assess the candidate’s suitability to join the programme.



Your practical work will be assessed by means of a practical examination to test your skills and assignments will be set to test your theoretical knowledge.

Financial information

All students will need the Colleges specified:

  • Chef and restaurant uniforms
  • Chef knives
  • Safety footwear
  • Recommended text book

These will be your personal property and will cost approximately £220 - £240.

Future opportunities

A City and Guilds qualification will enable you to gain employment within many types of catering and hospitality establishments or progress onto NVQ Level 3.

Past students have gained employment with companies such as the Grand Hotel Amsterdam, De-Vere Grand Harbour, Chewton Glen Hotel, Raymond Blancs' prestigious Le Manoir Quat Saisons and Lymington Hospital.
