Patisserie Level 3 at Gateshead College

Course description

The hospitality and catering industry is a fast-paced, creative world with a wealth of opportunities on offer. If you want to progress your career in this field in the specialist area of patisserie, this course is for you.

You'll be trained by our experienced team of teachers in our professional standard kitchens, which rival any you'll find in the industry, preparing dishes for paying customers in our student-run restaurant, Enfields.

Course content

You will develop your technical skills in producing;

  • complex pastry products
  • marzipan pastillage and sugar products
  • complex bread and dough items
  • cakes, biscuits, sponges and scones
  • chocolate products
  • hot and cold desserts
  • sauces coatings and fillings
  • You will also build your knowledge of essential health and safety information and how to be an effective team member.

All Level 3 learners take part in a group project.This is usually an exciting part of the course with the opportunity to run an event.

Students will undertake a work placement of their choice, some have included two week working experience in the city of Bordeaux, France and the island of Malta, as well as the Ritz Hotel London.

Entry requirements

  • You will need to have achieved Level 2 Cookery or have equivalent skills
  • Experience of working at Level 2 in Professional Cookery.

Assessment

Throughout the course, you will be assessed by building a portfolio of evidence and observation of practical tasks in the kitchen.

Financial information

During the course you will need to wear a professional chef uniform which you'll  need to buy, along with a knife kit.

Funding is available and we'll discuss this with you at your interview or induction.

Future opportunities

Alternatively you could progress into the industry. Pastry chefs are in demand and there are also opportunities for those interested in setting up their own business. Past catering students have enjoyed great success including employment with top North East eateries such as:

    • Gateshead College's Baltic Campus is located on the Gateshead quayside, just minutes from Newcastle City Centre and its attractions.

      The College is situated behind the BALTIC Centre for Contemporary Art and The Sage Gateshead.

      The College has its own car park, but at busy times alternative parking is available nearby.

      There is a charge for parking. Students can apply for a permit to allow free parking during study time.
