Level 1 (NVQ) Food Preparation and Cooking at Kendal College at Queen Elizabeth School

Course description

The food and drink industry is one of the largest employers in the North West, especially within Cumbria. Hospitality and Catering covers a broad range of areas from traditional industries such as brewing and baking to the production and processing of the food items that fill supermarket shelves as well as a range of jobs associated with the industry such as front of house and waiting staff.

There are excellent careers opportunities within hospitality and catering, particularly as we live within a tourist area.

This is a very practical course where you will work within the kitchens at the college. There are also theory lessons linked to your practical work. You will learn a variety of techniques to produce high quality food from full meals to baking, studying under the tuition of our trained and highly experienced chefs.

Entry requirements

There are no specific entry requirements for this Level 1 course, but we expect you to have a genuine interest in the course you choose.


Assessment will be through practical skills, in the kitchen, and written assignments.




Future opportunities

On successful completion of this two year course you will have developed a range of skills to enable you to progress onto a full time catering course at the college or find a job in the local area, combined with further part time training. There is wide range of Apprenticeships that can lead to an NVQ level 2 qualification and provide you with the opportunity to have on and off the job training while you work.

This course is worth up to 140 points.

      KENDAL College has become the first and only General Further Education College in Cumbria ever to be declared outstanding after an Ofsted inspection in December 2010.

      Kendal College is a partner college of the University of Central Lancashire and University of Cumbria and also a partner with all local schools in a new and exciting South lakes Federation where each partner collaborates to ensure that there is high quality teaching and learning in South Lakeland and Eden. Our aim is to achieve high academic standards, to offer outstanding facilities, a broad range of courses and to give each student the chance to succeed. Kendal College has outstanding retention and achievement rates.

      In 2009/10 only two general further education colleges from the 54 inspected achieved this top accolade from Ofsted. This effectively places the College in the top 5% when compared with the previous year’s data. Out of 39 categories scored by the inspection team, Kendal scored the highest grade, Outstanding, in 34 of them.  “Outcomes for learners are outstanding. Learners aged 14 to 18 are extremely successful in gaining qualifications.”

      One of the key factors was how the students at the College routinely outperform expectations, with higher grades and better jobs. For example, level one NVQ catering students who get jobs in four or five-star hotels and some students who arrive with no GCSEs at all, attain level 3 at the College, start a foundation degree which they then top up to a full honours degree  at the University of Central Lancashire or University of Cumbria.

      “The staff go the extra mile for students. The College is a safe and secure placefor them to learn.” The Ofsted report says: “Kendal College has improved consistently since the last inspection and is now Outstanding.

      “Managers, teachers and other staff are excellent role models for learners. They set themselves high standards and have high expectations. The college is highly inclusive and very effective in removing barriers to learning so that the majority of students make very good progress during their time at college. Learners enjoy college. They are able to choose from a very wide range of provision that ensures they enrol on a course that meets their future career intentions. Learners benefit from excellent support, extensive enrichment opportunities and additional courses that enhance their progression between levels of courses and to employment and higher education.
