Advanced Professional Cookery - C&G Level 3 Diploma at East Durham College

Course description

You will cover a mixture of theory and practical activities. The level 2 qualification is delivered in set theory sessions weekly, where you will complete knowledge statements which prove your understanding of the course. you will also learn about Health & Safety, the wider hospitality industry and how you can work towards your chosen job in hospitality; which in turn will help you to complete assignments within these areas. You will on a weekly basis complete practical work, working towards assessments and exam. Learners will prepare complex dishes for restaurant and exams.

Course content

Topics: 

Health & Safety, Food Hygiene, Vegetables, Poultry, Seafood, Cakes and biscuits, Pastry, Maths & English. Enrichment activities including, butchery work shops, visits to local businesses e.g. 

 

Entry requirements

A Level 2 Diploma in Professional Cookery should be completed before you can be enrol onto the Level 2 qualification. A Level 2 Food Hygiene qualification should also be achieved. Learners under 19 years of age will need to complete functional skills or GCSE depending on qualifications already achieved.

Assessment

You will be assessed throughout the course, within assessments and exams. Then when you are ready you will have 2 synoptic exams to complete, which have 4 complex dishes within it. You will work towards these throughout the year.

Financial information

If you have been a UK resident for the past 3 years and are under the age of 19 on the 31st August, you will not usually need to pay any course fees.

Future opportunities

You will be recognised as a Comis Chef working in a Hotel environment. You could progress to a Level 4 within a Foundation Degree in Culinary Arts and Financial Management qualification. You could gain a career within a number of hospitality organisations from hotels and different hospitality businesses and within the many catering establishments in the area, working up to a Management position. There is also the chance to work international on cruise liners, holiday resorts or in the forces.
