Course description

Who is the programme for?Candidates 16+ who wish to undertake their Professional Cookery qualifications. They may be on an apprenticeship programme, or already employed in a kitchen.Either as day release to College with some assessment in the workplace; or in the workplace, with some study at Trafford College.What is the programme structure?The programme consists of a Level 2 NVQ Diploma in Professional Cookery, a Technical Certificate and functional skills. The certificate requires 56 credits.The mandatory units focus on health & safety, food safety, handling knives and working with colleagues; the remaining are chosen to develop your culinary skill appropriate to your workplace.Are there any special facilities/requirements for the programme?Practical assessments at College will take place in the purpose-built quality kitchen environment.What awards will I achieve?Apprenticeship in Professional CookeryNVQ Level 2 Diploma in Professional CookeryTechnical Certificate in Catering PrinciplesFunctional Skills Requirement?You will also completeLevel 1 Key/functional skills in mathematicsLevel 1 Key/functional skills in English.

Entry requirements

GCSE Grade D or above in maths and English; and successful interview.

Assessment

How is the programme assessed?Assessment is continuous, with candidates undertaking practical work and producing written evidence to meet the requirements of the Certificate. Candidates will produce a portfolio which will be internally and externally verified.Examining/Validating Body - City & Guilds

Financial information

Will there be any extra costs involved?Candidates will need to meet the costs of providing files and plastic wallets and are strongly recommended to purchase the NVQ Level 2 Professional Cookery handbook.

Future opportunities

What can I do next?Successful candidates can progress on to an Advanced Apprenticeship in Professional Cookery. The qualification will support their progression in the Hospitality Sector.
