Professional Cookery (NVQ) Diploma Level 2 at New College Nottingham

Course description

Working in our award winning restaurant – Adams Restaurant and Brasserie at least once a week will give you a good feel for what to expect in the professional cookery industry.

 

ncn Clarendon also has state of the art kitchens where you will be able to quickly get to grips with the skills you need to work in the industry.

 

Taking you through things like kitchen organisation, customer service and work skills needed to work in the kitchen environment, this course will provide you with a sound starting point for working in the sector. 

 

Working with your tutor, you’ll also receive an individual learning plan to help you progress throughout the course.

 

Careers available to you once finishing the course include; chef, kitchen assistant, restaurant manager and more.  Before you know it you could be planning menus, preparing to oversee the preparation of food in hotels or managing your own kitchen.

Course content

The course has a variety of units to get you up to speed in professional cookery.
 
Not only will you have the chance to work in ncn’s kitchens and fully working restaurant but we are also in partnership with Capital FM Arena, who will offer you real work experience in; catering, crewing, event set-up, event management and front of house hospitality.

 

Units you will study include how to prepare;

-          Starters

-          Meat

-          Fish

-          Poultry

-          Soups

-          Salads

-          Pastry

You will also study;

-          Kitchen organisation

-          Customer service

-          Health & safety

-          Work skills.

In the last two years our catering students have met; Jamie Oliver, Marco Pierre White and Sat Bains.

Entry requirements

Students must have ONE of the following:

  • 4 GCSEs including English and Maths (one at Grade D) or equivalent - Functional Skills may be accepted in place of GCSE Maths and/or English
  • Level 1 Certificate in the Introduction to the Hospitality Industry
  • A satisfactory interview
  • Successful assessment activities including literacy & numeracy

Adults 19+ who have industry experience but do not have the necessary qualifications are welcome to apply

Assessment

You will be assessed through practical tests and short-answer questions.
