Introduction to Professional Cookery Level 1 C & G VRQ Diploma at New College Nottingham

Course description

Taking your cookery passion and skills that one step further, this course offers advanced training in the cookery profession.

Working in our award winning restaurant – Adams Restaurant and Brasserie at least once a week will give you a good feel of the fast paced environment that professional cookery provides.

Often taking the lead on service, under the guidance and support of your tutors, you will be able to excel in the skills needed to run a kitchen.

ncn Clarendon has state of the art kitchens where you will be able to hone your skills to perfection.

You will also be able to prepare your own menus and maybe even see them in action at the Adams Restaurant.

Careers available to you once finishing the course include; chef, kitchen assistant, restaurant manager and more.  Before you know it you could be planning menus, preparing to oversee the preparation of food in hotels or managing your own kitchen.

Course content

This course consists of the following:  

  • Food theory & hygiene  
  • Professional cookery  
  • Pastry  
  • Kitchen organisation  
  • Restaurant service  
  • Customer service  
  • Health & safety  

Students will put their skills into practice in a realistic working environment at least once a week.

Entry requirements

Students must have ALL of the following:

  • 5 GCSEs at grades A*-D, including English or Maths at a grade C or equivalent
  • A satisfactory interview
  • Successful assessment activities including literacy & numeracy

Adults 19+ who have industry experience but do not have the necessary qualifications are welcome to apply.


Assessment is through practical tests and written assignments and short-answer questions.

  • Level 2 Food & Drink Service, Professional Cookery (Food Preparation & Cookery) or Hospitality Services Apprenticeship Diploma (NVQ)

    • The original High Pavement Grammar School was established in 1788 and it wasn't until 1975 that it turned from grammar school into a sixth form centre. In 1999 the centre merged with New College Nottingham and since then has occupied a prime position on the edge of Nottingham Trent University's City campus, giving our A Level students a real insight into University life, before they've even got there.

      High Pavement is home to ncn's A Level courses and with 30 or so to choose from, our students have variety and choice, as well as great on site facilities, fantastic tutors and amazing opportunities during their time with us.
