Introduction To Professional Cookery Level 1 Diploma at Milton Keynes College

Course description

Are you are passionate about food and have you always dreamed of being a professional chef or running your own restaurant? If you are over 16 years of age and looking to develop a career within the catering industry then this course is for you. The course will also give you the chance to improve your skills in literacy, numeracy.

Course content

This course will give you a good overall perspective of the industry and will enhance your career prospects. It incorporates Food Preparation and Cooking, Food and Beverage Level 1 Certificate, Basic Food Safety Certificate and Functional Skills.

The course is approximately 50% theory and 50% practical. As part of this course you will be required to work in ‘The Brasserie’ the College’s Commercial restaurant. You will study the following 12 units:

  • Introduction to the catering industry
  • Food safety
  • Health & safety awareness
  • Introduction to healthier foods and special diets
  • Introduction to kitchen equipment
  • Introduction to workplace skills
  • Prepare & cook food by boiling, poaching and steaming
  • Prepare & cook food by braising and stewing
  • Prepare & cook food by baking, roasting and grilling
  • Prepare & cook food by deep and shallow frying.
  • Re-generation of pre-prepared food
  • Cold food preparation
  • Functional skills*

*Functional skills qualifications are designed to provide the necessary levels of English, and maths skills needed to ‘function’ in today’s society and workplace. They are a key component of all College programmes. You will complete at least 2 Functional Skills at an appropriate level as part of your programme.

Entry requirements

There are no formal entry requirements. However, as this course is academically challenging, students should hold (or achieve at assessment) Level 1 in both Literacy and Numeracy.

Mature candidates will be considered on an individual basis.

Assessment

There is continuous assessment through knowledge work books, timed practical tests and exams. Functional Skills are assessed by on-line exams and you will be given guidance and support to achieve these.

Future opportunities

After successfully completing the Level 1 Diploma you could progress onto the Professional Cookery Level 2 Diploma in Professional Cookery with a successful reference from your Personal Tutor.

Other options include an apprenticeship in the industry or seeking employment as a basic level Commis Chef.
