Culinary Skills VRQ Level 1 Certificate at The City of Liverpool College

Course description

This course is for those aged 16-18, who will require a lot of self-motivated study time. This is similar to the Professional Cookery, with less of a focus on assignments and academic ability.

The course is made up of 2 qualifications, cookery skills and food and beverage service. It is suitable for those who wish to get a detailed introduction in professional cookery skills in the catering industry. You will learn food safety and health & safety in the catering industry, gain knowledge and understanding in how to produce healthier meals including special dietary requirements, learn teamwork skills and how to use a variety of kitchen equipment. Specialised units in both silver service & wine service are available. Our training restaurant is open over five lunch times and three dinner ensuring that we re-create as far as possible a realistic working environment for students and the general public. We offer imaginative menus and both a wine list and public bar to enhance studies and communication skills.

You will also learn and develop new skills in cookery methods and you will be assessed on skills in boiling, steaming, poaching, baking, grilling and roasting. Catering is consistently a growth industry, this course will benefit you in gaining employment in a wide variety of catering sectors and successful outcomes on this course could lead to further progression on a higher level catering programme at the college.

This is a pass only course.

Entry requirements

You must be 16-18. Minimum entry requirements are GCSE grades F-G or above in English and Maths, or achievement of Entry 3 in the college online initial assessment tests in English and Maths. It is desirable to have a reasonable level of ICT, you will also be subject to interview.
