Course description

There has never been a better time to enter the hospitality and catering industry. The industry is growing year on year and this is particularly true for our local economy with the expansion of quality restaurants in the city centre and across Merseyside.

This is a specialist bespoke course for pastry chefs and patissiers.

Our courses are highly practical and our students leave the college well prepared to start a career in one of the world’s fastest growing industries after having enjoyed a substantial taste of it. Students gain practical skills and valuable experience working in our superb training facilities.

This programme is a high level programme and students should already be working in the industry as a practising patissier. This course is suitable for students who wish to develop their pastry skills to a high standard. The course is module based and consists of producing complex patisserie and confectionery dishes to a competent standard. Study will involve working with chocolate, sugar, cakes, pastry products, marzipan, hot and cold desserts to a quality restaurant standard.

There is a growing market for patisseries, as it's a high level, well paid skill.

Entry requirements

Level 2 Professional Cookery or Culinary Skills, or ABC Patisserie Level 2 Diploma or prior industry pastry experience.

Applicants will be given an interview and an initial assessment in literacy and numeracy.
