Professional Cookery Intermediate Apprenticeship at West Herts College

Course description

The catering industry is a large, diverse and demanding employer with a wide range of career opportunities in restaurants, hotels, pubs, cafes and contract catering. Typically apprentices will be preparing, cooking, and finishing a range of dishes from relevant menus and follow high levels of health and food safety.

Course content

Examples of module options include:

Prepare, cook and finish basic rice dishes Prepare poultry for basic dishes Cook and finish basic meat dishes Prepare vegetables for basic dishes Maintain food safety when storing, preparing and cooking food

The qualification is achieved by gaining practical experience at work. You will also be required to achieve a Level 1 award in English and maths and complete a workbook relating to employment rights and responsibilities.

Entry requirements

Employment at a suitable level - most employers ask for GCSEs in English and maths, but may have additional specific requirements.

Future opportunities

After completion of this course you may be able to progress to an advanced apprenticeship in professional cookery or join the industry. You may be able to find employment as a cook, chef, kitchen assistant, commis chef, wok chef, deep fry chef or stir fry specialist.
