Level 2 City & Guilds - Diploma in Culinary Skills at Telford College Of Arts And Technology - TCAT

Course description

You will gain knowledge and skills required to become a professional
chef. At level 2 you will undertake practical tasks in the kitchen
covering preparation activities such as preparing and cooking rice,
pasta and egg dishes, stocks, soups and sauces, meat, poultry
and shellfish and hot and cold desserts and puddings. You will
develop skills in: Mise-en-place, preparation and presentation of
food, Hygiene and safety in the kitchen, Nutrition, Menu planning,
Storage, packaging and labelling of food. You will learn in a suitably
equipped classroom or in the work environment. In addition students
will have access to simulated work experience through our own
restaurant The Orange Tree as well as relevant work placements
with our industry link organisations as part of their course. Full Time
Study Programmes are built around a collection of key elements
which all students benefit from, these include:
 
• Main Qualification in the subject of your choice
• English & mathematics qualifications for all students who have not
yet achieved A*- C grade in either subject
• Work Experience or External Work Placement which is planned
with you at the start of your course and links to your career goals
and ambitions
• Weekly Tutorial with your personal tutor
• A wide range of Enrichment Activities to support your broader
skills, such as team work or communication

Entry requirements

To have completed Level 1 Professional Chef Catering at Merit or
Distinction or equivalent
 

4 GCSE @ D including English or Maths (or full Level 1 @ M or D including L1 F/S)

 

Assessment

Units are assessed throughout the year by written and multiple
choice tests and practical examinations.

Future opportunities

Work as a commis chef within local restaurants, cafes, hotels and
hospitality providers or a Level 3 Apprenticeship.

Further information

Study within our brand new professional kitchens, work alongside
our professional chef lecturers. In addition a range of trips and visits
will support academic work within the programme, including the
