Professional Cookery Level 2 Diploma at Knowsley Community College

Course description

This course is designed for those who wish to work as professional chefs in the catering and hospitality sector. You will develop a broad understanding of the hospitality and catering industry and will learn, develop and practice the skills required for employment and/or career progression in this industry. You will examine health and safety, costings and menu planning. You will also work in our busy production kitchens serving food to diners in Bistro 36.

Course content

  • Food Safety in Catering
  • Prepare and cook meat and poultry
  • Prepare and cook shellfish
  • Prepare, cook and finish basic cakes, sponges and scones.

Entry requirements

At least 4 GCESs or equivalent at Grade D including English and/or Maths, or relevant L1 vocational qualification and working at L1 English and/or Maths.

Financial information

You will need a chef's uniform (whites), safety shoes and a set of knives.

Future opportunities

Once you have completed this qualification, you may progress onto a L3 vocational course or seek employment in the industry.
