Professional Cookery Level 2 at Wiltshire College

Course description

This course is ideal for students who have completed their Level 1 and wish to develop their skills further and gain employment within the Catering and Hospitality industry. If you have a passion for cooking and producing great tasting food this is the course for you.
This course develops the skills already gained to a greater depth and 
allows students to develop and practice the skills required for employment and/or career progression in the catering and hospitality industry.

Course content

You need to pass a total of 14 units to achieve the full Diploma:
  • Investigate the catering and hospitality industry
  • Food safety in catering
  • Health and safety in catering and hospitality
  • Healthier foods and special diets
  • Kitchen operations, costs and menu planning
  • Applying workplace skills
  • Prepare and cook stock, soups and sauces
  • Prepare and cook fruit and vegetables
  • Prepare and cook meat and offal
  • Prepare and cook poultry
  • Prepare and cook fish and shellfish
  • Prepare and cook rice, pasta, grains and egg dishes
  • Prepare and cook desserts and puddings
  • Prepare and cook bakery products


Entry requirements

Merit or distinction in VRQ Level 1 Professional Cookery

A satisfactory interview


2 GCSEs grade C (Including English Language) and 2 grade Ds, plus relevant industry experience

There will be set work to complete at home, i.e.: complete assignments and course work.
The assignment tasks are presented to candidates when judged ready for assessment. Assignments are graded pass, merit or distinction and detailed marking and grading criteria are provided for each assignment. All assignments are internally marked, graded, quality assured and a sample will be externally moderated.
The final qualification will be a VRQ Level 2 Diploma in Professional Cookery.
Level 2 CIEH Award in Food Safety if required.


Future opportunities

On completion of this qualification candidates may progress into employment or to the following qualifications:
  • Level 3 BTEC National Diploma in Hospitality
  • Level 3 N/SVQ in Professional Cookery (7083)
  • Level 3 Diploma in Professional Cookery (7100-03)
You could also progress onto employment as a Commis Chef or Chef de Partie.
