You will prepare and cook complex fish, meat, poultry and patisserie dishes.

This study programme is designed to build on existing culinary skills that you will already have developed at level 2 and will involve you in active and busy production kitchens in our fantastic facilities. You will develop a range of specialist craft techniques essential to a chef working at this level and will develop creative dishes to industry standards. You should be a good team player and have a passion for food. At the end of the course you will be able to find employment in your specified choice of hospitality venues such as fine dining restaurants, bistros and cafes.
A relevant vocational qualification at level 2 with merit grade and English/maths at GCSE grade C or grade 3, or above
No tuition fees are payable for students aged 16 – 18 on 31 August 2017.

Approximately £205 for uniform/kit and £40 for trips/materials
Senior positions in the Hospitality industry as Chef de Partie or Sous Chef, in Restaurants, Hotels or fine dining venues in the corporate industry; or you could use your skills to travel and work in the developing event and leisure sector. Students may progress to University to study a Foundation degree in Culinary Art.
Student Case Study
Student Katie Carruthers completed a Level 3 professional cookery course as well as achieving English and Math’s Functional skills Level 2. Katie says “Level 3 professional cookery really helped prepare me for working in industry. I learnt many valuable skills to help me when I go out and work. It was brilliant putting my own dishes on the menu and working out all the costing (applying my Maths skills), such as lightly grilled Monkfish kebab with baby vegetables, accompanied with a prawn and dill sauce. I was also given lots of opportunities to help with functions and outside events which gave me more work related experience. The tutors are also helpful and supportive and resources were excellent. I would recommend this course to anyone looking to go into the catering industry.”
