Professional Cookery L3 Advanced Technical Diploma at Sussex Downs College

Course description

learners will acquire specialist skills and knowledge of a range of commodities. Candidates will be introduced to the full range of products used within professional kitchens and will study topics such as meat & offal, fish & shellfish, breads and chocolate items. Candidates will also develop supervisory skills to include topics such as legal and social responsibilities and finance control. Included within the study programme learners will gain barista skills and complete to include drinks such as cappuccino, latte, espresso and smoothies.

Entry requirements

You will need to meet our standard entry requirements.

You will need to have successfully completed the Professional Cookery Level 2 Diploma. In addition you will need at least GCSE English Language and Maths grade C/4.

Assessment

One externally set, externally marked exam under examination conditions. One externally set, externally moderated assignment, e-Portfolio management to assess candidates depth and breadth of understanding and structured work experience/placements where employers will be involved with setting assessments for a minimum of 49 hours. Assessments will be graded at Pass, Merit, Distinction and Distinction*

Future opportunities

The skills developed could lead to a position within a kitchen Brigade at high-end establishments and/ or management training schemes or travel the world 'The World is your Oyster'.
