Culinary Skills Diploma level 2 at Leicester College

Course description

This course is taught over one year and gives you a board overview of the principles of cookery covering meat, fish poultry, vegetables and desserts while producing food to restaurant standard. You will have the opportunity to cook in a award winning restaurant, and visit high class hotels in London as part of your course. If you are aged 16-18, you will be enrolled on a study programme which will include retaking GCSEs or undertaking Functional Skills in English and maths if you haven't already achieved a grade 3 or above. You will also be required to complete a work experience placement and an employability programme.

Course content

Does the challenge of cooking excellent food in a hectic kitchen preparing fresh food ready for service appeal to you? Working as a chef is a varied, challenging yet very rewarding job. On this course you will find yourself producing fresh dishes from €œfine dine€ cuisine in the colleges taste restaurant to preparing both savoury and pastry dishes ready for assessment in the classroom kitchens. You will also have the opportunity to experience serving customers in the restaurant developing both your food and customer service skills. So if you like working as part of a team producing the finest food and seeing satisfied customers eating your food this is the career for you.

Entry requirements

Standard entry to this course requires one reference. It is desirable that you can demonstrate 90% attendance. A GCSE in both English and maths at grade 3 (D) or above is required. Consideration will be given to all applicants over the age of 19, who do not hold formal English and maths qualifications.

Assessment

Assessment is via coursework, completed over the length of the course. You will need to evidence in your work that your skills and understanding are sufficient to pass each unit. There are no traditional exams, but you will complete a final synoptic test.

Financial information

Material fee £120.00. There are trips to top London based hotels and restaurants which form part of your course. You will need a full set of catering knives and chefs whites, details of a recommended supplier provided on application, continuing learners may only need to replace some items.

Future opportunities

On successful achievement of your level 2 course you could choose to progress onto level 3 diploma in advanced professional cookery or an advance apprenticeship in hospitality or cookery. Alternatively you may wish to find employment in the hospitality industry as a commis chef or similar position within hotel and restaurants.
