City and Guilds Level 1 Certificate: Culinary and Restaurant Skills at Loughborough College
Does the challenge of cooking the finest food in the fast-paced, kitchen environment of a top restaurant appeal to you?
The work of a chef is varied and you could find yourself doing anything and everything from preparing fish as a starter to preparing whole venison from the larder section or tempering chocolate for desserts.
There are so many options available but in a few years you could be managing that prestigious kitchen. So, if you like meeting new people, helping them out, working in a team, and seeing a satisfied customer eat your food, then this is the career for you.
Modules include introductions to investigating the hospitality and catering industries, food safety in catering, healthier foods and special diets, personal workplace skills, and an introduction to kitchen equipment.
You'll also be taught how to prepare and cook food by boiling, poaching, steaming, baking, roasting, deep frying, shallow frying, and braising, as well as preparing cold food.
Theoretical aspects will be assessed primarily through assignments and short-answer questions. Seven practical tests will take place throughout the programme, with the two main practical tests happening towards the end of the course.
- At least two GCSEs at grade G/1 or above (or equivalent).
- You should also be able to demonstrate your numeracy and literacy skills through a short test.
