Foundation Studies in Hospitality & Catering at Sussex Coast College Hastings

Course description

During this one year course you will be able to put all your flair and passion for food into practise while learning skills in food preparation, cooking, and food and beverage service.

Course content

Over the course of the year you will develop skills in how to prepare and cook food, using methods and techniques such as; boiling, poaching, steaming, stewing, braising, baking, roasting, grilling, and deep and shallow frying.

You will be able to practise these skills in our fully-equipped kitchens and fully-functioning restaurant at our Station Plaza campus. You will be able to get to know the types of equipment used in a professional kitchen, while gaining a thorough understanding of the importance of food safety and health and safety in the kitchen. You will also be able to practise key skills in food and beverage service.

The units you will cover are:

  • Food safety in catering
  • Introduction to employability in the catering and hospitality industry
  • Health and safety awareness for catering and hospitality
  • Introduction to healthy foods and special diets
  • Introduction to kitchen equipment
  • Preparing and cooking food (including regeneration of pre-prepared food and cold food preparation)
  • Food and beverage service skills

Entry requirements

To apply for this course you will need an entry certificate or 2 GCSE's E-G. 

Assessment

Your assessment during the course will be split into 70% practical tasks, 20% coursework assignments, and 10% exams. Practical tasks are observed and assessed in the college restaurant. There will also be presentations and question papers on topics within the qualification.

Financial information

During the course you will be required to wear a uniform, which will cost approximately £220. You may also have the opportunity to visit a number of catering and cooking events which may incur additional costs.

Future opportunities

The course is an excellent starting point for further training, such as the VRQ2 in Food Preparation & Food Services.

After completing the course you may look to start your career in the industry in food service or counter service roles, or as food preparation staff.

    • Located next to Hasting town centre, Station Plaza is a large, light-filled building surrounded by 22,000 square meters of study space and social zones. Classrooms are equipped with the most up-to-date resources and interactive whiteboards. It houses multiple IT suites, a gym, Coast coffee, Subway, Coast Restaurant, a training kitchen, a professional salon, an art shop, diner and a large Learning Resource Centre. 

      Students have 24/7 access to lessons and learning resources from home via WIKI, podcasts and teacher/student blogs. Students can hire laptops from the LRCs and both sites are WIFI activated.
