Cookery and Hospitality Entry Level at Calderdale College

Course description

The hospitality and catering industry is a young and vibrant sector. There is lots of night and weekend work, so you will need to be dedicated, enthusiastic and full of energy, you will also benefit from the added flexibility that working shifts can provide. This is one of the biggest industries in the country, spanning restaurants, hotels, cafes, bars and other catering providers. Public services, large companies and department stores all need canteen and catering staff too.

Course content

Along with carrying out the practical part of the course in the state of the art “Cuisine 1893” at Calderdale College, the qualification will meet the need of employers and provide you with the knowledge, understanding and skill to work in Industry.

A foundation Level course that will give you a real taste into the hospitality industry and provide you with the basic cooking skills. You will learn softer skills such as personal social development, Functional Skills in Maths and English alongside customer service and basic food preparation and cooking. You will cover the following units:

  • Basic food preparation and cooking: - Vegetables, simple salads, fruit dishes, pasta and rice
  • How to use kitchen equipment
  • Basic meat preparation and fish preparation skills
  • Health & Safety
  • Food Safety

You will be taught basic food preparation and cookery methods, food safety, customer service and the serving of food and drink. You will also be given an insight to the industry as well as routes of progression.

Entry requirements

School leavers should aim for 4 GCSE passes. You will need to come to college for an interview.

Interviews will be held with the specialist tutor. You will be required to bring in any previous qualifications and experience. The interview process involves a formal interview as well as a skills test.

Assessment

Assessment takes place throughout the course. Assessments include observation of practical activities in the kitchens and assignments to cover the underpinning knowledge.

Financial information

In most cases students aged 18 and under who wish to enrol on a full time further education course will have their fees waived.  Students who are aged 19 and over and who wish to enrol on a full time course should contact our Student Services Team on 01422-399367 for more information.

Future opportunities

This qualification will provide you with the skills to work in a professional kitchen. The ideal route would be to progress onto the VRQ Level 1 Award in Culinary Skills.
