Proficiency in Bakery Skills City & Guilds Level 2 Diploma at Preston's College

Course description

The bakery industry includes the manufacture of bread, fresh pastry goods, cakes, rusks, biscuits, plus preserved pastry goods and cakes. It employs 101,000 people in 3,000 workplaces and 48,700 retail bakery outlets across Great Britain.

Course content

During this course you will cover a range of different units designed to give you the ability to work within the Bakery and Patisserie industry and/or a Pastry section in a hotel or restaurant. You will learn how to prepare, cook and finish a variety of dough, pastry and cake based products. You will also study ingredients used in bakery; where they come from and the manufacturing process, their uses in bakery and identifying and recognising quality points. There may also be opportunities to cover extra units such as cake decorating and chocolate work.

The vast majority of employers require you to have certain technical skills, knowledge and understanding to work in the hospitality sector, but they are also looking for employability skills which will enable you to adapt to the ever changing roles needed to survive in the global economy. Throughout all of your units you will develop a range of employability skills which include:

– English and maths
– A positive attitude to work
These units are essential to give you a basic understanding of the industry and ensure that you are ready to start your career.

Entry requirements

You need four GCSE’s at grade D or above including English and maths. You’ll also need to attend an interview and skills session.


The assessment for this qualification is through centre-devised assessment material, which is internally marked and externally moderated. This will include practical observations, written assignments and the completion of a portfolio of evidence. All of the assessment criteria must be met. There are no further categories of pass; the certificate is not graded. Ongoing formal and informal assessments will be completed throughout the course. These assessments will prove industry knowledge and show how you would go about applying this knowledge in a creative and effective way to everyday situations.

Future opportunities

After Level 2 you can progress to Level 3 Bakery, Level 2 Hospitality or Level 2 Butchery. Alternatively, you may seek employment in the industry.
