Professional Cookery Level 2 NVQ Diploma at Redbridge College

Course description

Would you like to start a career as a professional chef? On this practical course you will learn how to prepare different types of food through a flexible selection of units, making it ideal for those who may not want to handle certain food types. This full-time year long course is perfect for learners who have completed an NVQ Level 1 Diploma in Hospitality, and is ideal preparation for study at Level 3. Along the way you will gain valuable insight into what it is like to work in catering and will even get the opportunity to take on paid work in Rouge Restaurant, providing catering for morning/evening and special events.

Course content

Units you will study include:

  • City & Guilds Award in Food Safety and Catering
  • Maintain a safe, hygienic and secure environment
  • Contribute to effective teamwork
  • Maintain food safety when storing
  • Prepare and cook fish dishes
  • Prepare and cook meat and poultry dishes
  • Prepare and cook vegetable dishes
  • Prepare and cook hot sauces and soups
  • Make stocks

Functional Skills: 16-18: You will also study English and maths to support your main course 19+: You may study one of the functional skills if appropriate

Entry requirements

You will need to have achieved three GCSEs at grade D or above, including English and maths, or equivalent qualifications such as an NVQ Level 1 in Hospitality. You will also undergo a skill scan during interview.

Assessment

You will be taught by our highly skilled team of Hospitality and Catering staff in the college’s own Rouge Restaurant. Assessments will take place through practical assessments, portfolio work and written tests. You will also be expected to complete a minimum of 36 hours work placement experience throughout the year.

Future opportunities

On successful completion of this course you will be ready work in a professional kitchen as a commis chef. You will also have the opportunity to further enhance your knowledge and skills by progressing on to Level 2 Food and Beverage Service of NVQ Level 3 Diploma in Professional Cookery at Redbridge College.
