Catering:Introduction to the Hospitality Industry(Level 1) at Suffolk New College

Course description

Design and produce a menu for Shelley’s lunchtime buffet service. Bake fresh bread and cakes and be a part of our Granary Business. Take part in fun competitions to produce your dishes, and make your style. Attend enrichment activities such as trips to Jimmy’s Farm and Suffolk Show.

Course content

The study programme will be over 3 days a week and you will have two kitchen sessions where you will learn the essential skills required to make you a good chef. Time will be spent furthering your skills in English and Maths ability in specially designed lessons which are interlinked to specific catering knowhow such as weights and measures and reading and understanding recipes. Each time you cook you will record your work on a diary sheet which will make up your portfolio along with photographs of the dishes you have made. This ‘evidence’ will then be backed up with a final observation from your tutor of you working on your ‘master chef’ project. The level 1 course will prepare you well for the next step NVQ Level 2 in Professional Cookery.

GCSEs at grade E-F or grades 2-1

Tuition Costs 

No tuition fees are payable for students aged 16 – 18 on 31 August 2017. For all students aged 19+ please visit our website www.suffolk.ac.uk. Details regarding fee remission and Advanced Learning Loans can also be found at the above website.

Additional Costs

Approximately £165 for uniform/kit and £30 for trips/materials  

Future opportunities

 

Most level 1 students choose to move onto study Level 2 Professional cookery. They will have already studied 3 of the subjects at level 1 so can focus more on the other units which make up this qualification. Work experience on functions and gaining confidence in a range of skills such as knife techniques will provide the skills to develop your own recipes and ideas as a junior chef.
