Professional Cookery (QCF) Level 3 Diploma at College of North West London (FE)
The level 2 courses are suitable for anyone aspiring to become a professional chef and dependednt on the study route also a professional front of house personel. Our training kitchens and restaurant will give you the opportunity to experience first-hand what it is like working in commercial premises, dealing with customers and gaining valuable work skills. This course is for you if you are looking to develop your food preparation and cooking skills, along with your knowledge of both the food you cook and other vital aspects you will require for working in the industry. There is the option to study this qualification alone or as a full time programme with an NVQ Level 2 Diploma in Hospitality Services (Food and Beverage route). This course will equip you with the skills and knowledge necessary to progress to an NVQ Level 3 in Professional Cookery, a Level 3 Apprenticeship, or into employment.
This course includes 16 mandatory units, equating to 68 credits: • Investigate the catering and hospitality industry • Health and safety in catering and hospitality • Healthier food and special diets • Catering operations, costs and menu planning • Applying workplace skills • Food safety in catering • Prepare and cook stocks, soups and sauces • Prepare and cook fruit and vegetables • Prepare and cook meat and offal • Prepare and cook poultry • Prepare and cook fish and shellfish • Prepare and cook rice, pasta, grains and egg dishes • Produce hot and cold desserts and puddings • Produce paste products • Produce biscuit, cake and sponge products • Produce fermented dough products Dependant on study route you may also study an NVQ2 Hospitality Services Food and Beverage. Under 19 will also study Functional Skills in English and Maths, a 2 week workplacement and group tutorial.
You will need English and Maths skills at Level 1 and a relevant Level 1 Catering qualification or proven experience. If you do not have evidence of your English and Maths levels you will be given an online English and Maths assessment after you submit your application. You may also be asked to complete a piece of free writing or a vocational assessment. If you meet the entry requirements you will then be offered an interview with a tutor to discuss the course.
You will be observed and assessed with timed practical exams, written assignments and short answer question packs to test your knowledge. There will also be one online test for food safety.
